Welcome to this week’s culinary journey!

In this challenge, my goal is to blend creativity, culture, and simple cooking ideas that anyone can try from home. Each week, I explore a new theme, experiment with flavors, and learn something fresh about food from different parts of the world.

This week’s presentation reflects not just the recipe, but the inspiration, the process, and the joy behind creating it. I hope it brings you as much excitement as it brought me while preparing it.

Now, let’s dive into my work for the week.

Week 3: “Healthy Local Cuisine”

This week is all about taking a local dish you enjoy so much and transforming it into a healthier version without losing the taste and comfort. You can choose any food of your choice, anything simple!

Our goal is to reduce oil or use water instead, add more veggies, bake instead of fry; just make it lighter, simpler and fresher.

Remember, you don’t need to spend extra money, just make use of what’s available to you.

This week is all about:

✨ And creating new ways to enjoy old favorites.

For this week, I decided to reduce oil while cooking. Generally, most cooking oil we use are mostly unhealthy for us but to apply some healthy measures while still maintain my taste, I prepared oil-free vegetable sauce!

Preparation method!

• In a clean dry pot, go in with your sliced onions. Add a pinch of water and continue stirring until it changes color.

• Add in your sliced ginger and garlic and continue stirring. Cook for 2 minutes Keep adding water little by little as you stir to avoid getting burnt.

• Add the tomato paste and combine for a good mix.

• Add your spices and mix well. Taste for salt if need be and keep adding water little by little because you don't want to have a running sauce.

• To maintain my original local taste, I added so crayfish, pepper, and other condiments. Stir non-stop until your ingredients are well cooked.

• Go in with the veggies, and give a good mix.

• Taste for any adjustment and mix thoroughly. Watch it as you stir to avoid getting burnt. It's a sauce so I was ok with the texture and I served my sauce with white rice.

To complete my Local Taste, Global Twist, and to maintain taste while I eat healthy, I paired my sauce with white rice and egg to give it a good combination. Food can still taste amazing while being healthy!
