Corn, whose scientific name is "Zea mays". It is a type of grass native to Mexico, which has been cultivated by indigenous peoples for many years, corn was introduced in Europe after colonization to America, getting a great acceptance among the European community, who saw it as a food very accessible and nutritious.
Corn is a plant that belongs to the genus of grasses. It presents two types of root, some main that are fibrous and others that arise in the first knots, on the surface of the ground. These roots have the function of keeping the plant upright. The stem is composed of three layers: an outer layer which is impermeable and transparent, a wall through which nutrients are transferred and a marrow with a spongy and white coating where the food reserves are stored. The leaves have an elongated shape and are wrapped around the stem, from which sprout the ears or corn ears. The ear, is a trunk covered with grains that represent the edible part of the plant.
There are different types of corn, some of them are:
1.Sweet corn: this type of corn is cultivated to be consumed when the ears are still green, commonly used in the preparation of roasts or boiled. It is called sweet because its grains have sugar in high proportions, which gives it that sweet touch.
2.Maize blowout: this kind of corn has the peculiarity of being excessively hard, this is due to the starch that makes it that is in small quantities. When these grains are exposed to high temperatures, they burst, letting out the endosperm.
3.Hard corn: is one that is characterized by its round and hard grains, is used mainly for the manufacture of corn starch, its production is intended mostly for human consumption and the rest is used to feed the animals.
4.Maize toothed: it is the one that more is used, in spite of being a corn prone to all class of insects and fungi, besides that it dries very fast. This type of maize results in higher yield, the grains of yellow tones are assigned as food for the animals, while the white grains are for human consumption.
5.Corn floury: it is very popular in Mexico, it is a corn with a very soft starch, its grains have different colors and textures. It is used exclusively for human consumption.
The corn is not sown in seedbed, but by direct seeding. The ideal time is from April to the beginning of June. The technique of seeding is known as "to blows", with holes of 3 cm. approximate depth.
In each hole two or three seeds are deposited.
It is convenient to leave a space between bushes, to avoid cross-pollination; in choosing the ideal place to plant, although it is usual in this type of crops to do it in rows, it is best to do it in blocks, leaving 35 cm of separation between plants.
The reason for these spaces is to avoid, as we have said, the risk of pollination, among other things because corn pollinates when there is wind.
