"Recipe of the Day, Week No. 87: (White Soup and Pounded Yam)"

Today, I will bring a delightful delicacy to your screen and of course, it is one of the Nigerian most cherished local delicacy ( White Soup and Pounded Yam)
Ingredients Used
- Yam
- Goat meat
- Cowskin
- Smoked fish
- Stock fish
- Crayfish
- Maggi
- Salt
- Fresh pepper
- Onions
- Hot leaf

Peel, wash and set yam to cook.
Cooking yam; no ingredient added
Wash goat meat; add onions, blended fresh pepper, maggi, salt and a little water then steam.
While steaming the meat, add cowskin, stockfish and smoked fish then continue steaming.

At this point, yam is soft, put few pieces into the mortar and pound.
Remove a little and keep aside for thickening of soup and continue pounding till the yam is smooth for swallow.
Check the proteins, add a little water for cooking , maggi and salt while it's still on fire.
Add fresh pepper then cover to boil.
Add crayfish and a little yam to thicken the soup.
Allow it to boil for one minute and add hot leaf.
Boil for few seconds and turn off the gas. I served the white soup with pounded yam.
