Steemit Iron Chef 2017 #01 : Homemade Spicy Ketchup

in #steemit-ironchef7 years ago (edited)

Hey foodies!

Welcome to the first week of Steemit Iron Chef. Are you all as excited as I am? This week's theme is all about the most popular vegetable (or fruit - if you want to be more specific): tomatoes. So, I made this spicy ketchup that I started to make a few years back because my boyfriend uses a lot of store bought spicy ketchup. Back then it was meant as a homemade gift for him. But now, it has become sort of a staple recipe for me.

It tastes so good. I'm not that big fan of ketchup. But when it comes to this spicy version I get absolutely obsessed with it. It's perfect for dipping or to use as a sauce for sandwiches, burgers and hotdogs. I hope you'll give it a try, so you can see for yourself. You may have all the ingredients already on hand. :)

Because ketchup on its own looks a little desperate, I combined it with a hotdog bun, a good amount of onion rings and a vegan seitan sausage. Because of that this dish is completely vegan. Of course, vegan ketchup isn't really a new thing. But mentioning it that something is vegan doesn't hurt anybody, am I right? ;)

Homemade Spicy Ketchup

(this is a modified recipe by Joy the Baker http://joythebaker.com/2013/07/homemade-spicy-ketchup/)

Ingredients

2 tbsp olive oil
1 big onion, chopped
2 gloves of garlic, minced
2 tbsp tomato paste
1 tsp smoked salt
1 tsp mustard
1/2 tsp paprika
1/8 tsp gloves
1/4 tsp allspice
1 chili (more or less depending on how spicy you like it)
3 cups tomato puree
1/2 cup brown sugar
1/4 cup apple cider vinegar

Directions

  1. Place oil in a medium saucepan, over medium heat. Saute onions until they are transparent, tender, and begin to brown. Add the garlic. Add the tomato paste, salt and all of the spices to the pan. Stir until the tomato paste is evenly distributed and the spices are fragrant. Add brown sugar, vinegar and crushed tomatoes. Stir to combine.

  2. Let mixture simmer over low heat for about 45 minutes. Mixture will thicken to a ketchup consistency. Stir occasionally. Remove pan from heat and use an immersion blender to blend the chunky ketchup smooth. If you don’t have an immersion blender, you can carefully place the warm ketchup in a regular blender to blend smooth. Just be sure to leave the blender lid slightly ajar so the warm contents don’t burst.

  3. Taste and adjust seasoning as necessary. Store ketchup in glass jars in the fridge. Ketchup will last for up to 1 month in the fridge.

Hey @progressivechef, thank you for your nice comment! :)

Because this recipe uses canned tomatoes and is made really quick (besides the time to concentrate the sauce and the time the sauce needs to cool down and chill) I started to make it right after the moment I saw this week's theme for the contest. :D

Give it a try! It's also very good for Curry Wurst (curry sausage), a German classic, when you put a few dashes of curry powder on it. ;)

Thank you for making it possible to participate. I love it so far! :)

It even helps mentioning it's vegan/vegetarian, because those are like key words, for when our subconscious minds scan the text for familiar words :)

And that is a great way to upgrade ketchup :) I'm also not specifically a fan of it hahah :D I love Liutenitsa, though! It's the Bulgarian version of ketchup, and it's awesome!

I'm glad that you think this way and that it's worth mentioning in your opinion. :)

Thank you @tehshikari. It is really better than normal ketchup. ;)

I googled Liutenitsa and it reminds me of Ajvar. And if its taste is similar to it, I love it too, haha. :D

Good idea on how to spice up ketchup. Good luck on your entry

Thank you @outwalking! I appreciate that! :)

Awesome! Spicy ketchup is the best ketchup in my opinion. Good luck in the contest, I hope to enter too :)

Thank you @jeffjagoe! I totally agree with you. :)

Thank you! I'm looking forward to your entry, good luck to you too! :)

that looks great will have to try it !

This looks like a really tasty tomato ketchup!

Years ago I was always experimenting to make ketchup with fresh tomatoes, but it didn't really work out.. I was never happy enough with a recipe because otherwise I still would have known a good one right now. The ketchup experimenting days failed on me.. haha..

Then again, Belgium tomatoes suck! You might as well infuse some water with tomatoe flavor. Actually now that I don't live in Belgium anymore it is not Belgium tomatoes what is the problem.. it is supermarket tomatoes! Big agri doesn't care about the taste.. :D

Anyway nice entry for the contest :) good luck!

You're completely right with that. That's why I use canned tomatoes for this recipe. Canned tomatoes are actually more flavourful than fresh tomatoes (in general because when they are in season and of high quality, they can be also very flavourful) because the industry uses left over seasonal tomatoes for it. So, try it with canned tomatoes the next time. I hope you'll be satisfied with the result.

Thank you for your nice comment @mitchiesfoodrace!

Yummm!! I made ketchup once from tomato juice and it took FOREVER and made a giant mess in my kitchen (looked like blood spatter!!) Yours looks great, and i LOVE that you added some heat! Yours looks so smooth and all of those seasonings probably make it amazing compared to that sugary too sweet store bought ketchup!

Exactly as you said! This ketchup recipe is really good. I hope you'll give it a try soon. Let me know, please @jaymorebeet! :)
