Phone Verification Removed: We've simplified the registration process by removing the phone number verification requirement. This makes it easier and faster for new users to join the Steem community.
Email Domain Whitelist: To maintain security and prevent abuse, we now use an email domain whitelist system. Only emails from approved domains are accepted during registration. This approach provides a balance between accessibility and security.

You can join by using a gmail email address. That doesn't mean you log in to gmail to post and read on Steem.
I believe you know what the concern is. Gmail is Google and Google registrates every step, Steemit included, but hey if governments are going to use it.

I'm not quite understanding.
This post details the fact that you can now sign up with an email address only instead of as before, where you could sign up with and email address (including a Google email address) AND a phone number.
The Steem blockchain is public, so anything posted is publicly accessible.

fastmail.com might be good to include; it's a paid service, so probably low likelihood of spam.
They have a list of alternate domains users can use for their email addresses:
Fastmail domains
The most common would probably be:
fastmail.com, fastmail.fm, f-m.fm, ftml.net, fastmail.co.uk, fastmail.com.au
123mail.org, allmail.net, emailuser.net, imapmail.org, mailworks.org
