What a year 2018 has been - some amazing highs and some really really sad lows!
Cryptos took a real scary dive and many of our Sandwiteers sadly are missing in action, but one certain thing remains here in the Steemit ocean, and that is our beloved Steemit Sandwich Contest run by that amazing Manwich maker @jaybird.
Nothing gets this man down!
Along came a lovely lady @llfarms who has been sponsoring SSC for a good couple of weeks already, so a big thank you to both these wonderful folk!
Running a small self-catering/ bnb establishment is hectic come the year end school holidays - our staff go home as their family homes are in rural areas, so hubby and I have to both pitch in and do the servicing of the units, washing linen till it comes out my ears! Fortunately our good neighbour also pitches in and lends a helping hand!

What sandwich to make on the last day of the year 2018? I had a couple of homemade Rotis (Indian unleavened bread) and decided to serve them with mince kebabs and a spicy tomato & onion chutney.
Ingredients

  • Rotis
    Meat Balls
  • Ground Lamb
  • Mint, Parsley & Thyme
  • Oats & 1 Egg for binding
  • 2 Onions 1/2 finely diced for meatballs, the balance used for the chutney
    Tomato & Onion Chutney
  • 1 baby Leek diced
  • 2-3 Tomatoes diced
  • Jeera seeds, Masala, Cinnamon bark, Turmeric, Dhania Powder (Coriander)

Mix meatball ingredients, form into cocktail size meatballs & fry in a lightly oiled pan till golden brown on both sides
    IMG_20181230_182546_1.jpg
Sautee onions, leeks and spices in a little oil, add diced tomatoes and season to taste, cook till soft
    IMG_20181230_182546.jpg
Place meatballs in chutney and cook on low heat for a little while
    IMG_20181230_183151.jpg
Divide Roti into three pieces, place a meatball and chutney on each one
    IMG_20181230_184206.jpg
Roll up and place on a wooden skewer

FOR TSE ---> Jeera = Cumin. I know it well. A standard spice in Mexican food.

As a lover of curry or any spicy dishes, I'm never without this. I need to start experimenting with Mexican food!

Wow those look good. I have meatball material (aka sausages per birds) and low carb wraps with no team playing football today. Maybe I can do some damage in the kitchen!

Thanks Lizelle! Per normal your presentation and product are epic.

I do hope you try making that, the chutney gives it such a nice zing! Thank you for your lovely comments @bigtom13 :)

Step quickly, to wish you a happy year 2019, may God continue to bless your great personality and always maintain that good character, in addition to continue to delight us with rich recipes, a great embrace extended to your family. @lizelle

Ah thank you @perlanacarada, wishing you and your family a wonderful 2019, may things improve in your country:)

Showed the recipe to Marian and guess what I will be eating soon. Our thoughts are with you Lady Lizelle as you struggle with the absence of your staff. Blessings!
