I piddled with some raspberry boxes a couple years ago doing some remote digital displays on the cheap. Probably do one of the kits with a couple SD cards she can swap out and not have to reload everything.

I would recommend just loading the SD card with your own version of Raspbian, most of the kits include Noobs which is a loader with multiple OS installers. I like to just write the SD stick directly with latest Raspbian version.

Cool, that's what I did before, I think I used etcher to write the image to the SD.
lol, I guess I should probably let her figure some of that out. I was thinking loading a couple up, I used a ubuntu image before, then she'll want a retropie (me too..), and probably a Raspbian.
