"My Own Recipe of Ekpang Nkukwo"
Greetings everyone!
Welcome to my blog, am so delighted today to share a wonderful recipe with y'all it is called ekpang nkukwo a local cuisine known within cross River and akwa ibom state, it is our cultural heritage this dish is very important in any of our cultural occasions it represents home it speak about culture and tradition.
My main ingredient for this recipe is wateryam and unripe banana, the unripe banana can be replaced with cocoyam as well this unripe banana help the water yam stay firm during wrapping it also give a very unique flavor to the food.
Ingredients
• wateryam
• young coco yam leaf
• unripe banana
• dried fish
• cow skin
• perewinkle
• fresh pepper
• Red oil
• seasoning
• scent leaf
Preparation process
I started by peeling both the water yam and the unripe banana the washed them and blend together, after blending I still mixed them thoroughly then added salt to taste and mixed it up.
This is a young coco yam leaf am going to used them for the wrapping I cut them into smaller pieces washed and set it aside.
I careful wrapped the blended water yam and banana mix into the leafs then I added all my ingredients to it spread them evenly on the wrapped wateryam.
Cold water would make the wrapped wateryam scatter so I used hot water instead poured it in a little above the ingredients the cook for just 10 minutes, opened and stirred it for the ingredients to marinate well with the wrapped wateryam.
I used a kitchen knife to cut the wrapped wateryam into smaller pieces and allowed it cook again for a little while then I added the scent leaf and stirred up to combine.
The last on the list was palm oil so i added it and stirred then allowed it simmer for few minutes then my delicious ekpang nkukwo was ready to be served.
Like I earlier said this is a cultural heritage that is passed down through generations, this dish traditionally is served during important celebration or social gatherings especially traditional marriage ceremony.
It also has nutritional importance it highly nutritious especially for new mothers it support health and well-being.
