I visited south Korea last year for work. Only stayed a short time, but the food was sooooo good!
I also remember staying at a hotel that was all linked in to many blocks of buildings. You could go for ages underground in malls and tunnels before coming up completely elsewhere!

Yes - I also liked the local food a lot - cheap and very tasty. My favourite is the bbq restaurants.
I have spend all-in-all almost three months in South Korea - only issue is the time it takes to fly from Helsinki... And your hotel sounds like the Intercontinental one - with a shopping mall attached to their basement (OK, there might be more of them).
The BBQ is the best, but I would often order the BiBimBab (the rice with the mix of veggies and meat). Three months there sounds great, unfortunately I was only there for a few days with most of it trying to overcome jetlag. Thus, I wasn't able to see much.
I can't remember the name of the hotel, but I remember it was part of a huge corporation, there was also an attached theme park with rides and everything!
Helsinki, I will be there in March. Looking forward to it, I love coming to Sweden. I always bring back a couple of bottles of the Cloudberry liquor, a perfect nighttime drink!
