Kitchen Happenings On The Golden D Homestead: Lacto-Fermented Soda Update, Homemade Vanilla & Decarbing More Cannabis
So much happening in the Golden D Homestead Kitchen today!
Got all my little projects from fermenting sodas to making some homemade vanilla bean and MUCH MORE! Come on and grab a cup of coffee and let's see what's been occupying my time!
I am moving full-force ahead with my desire for better drinking choices; so today I made a new lacto-fermented soda. Today's was a lemon-lime one. Instead of using the ginger bug I made last week, I used a champagne yeast lacto-fermented starter I made the other day.

In the DTube video I took you through the process of making the lemon-lime lacto-fermented soda recipe I chose; as well as some other updates about my raspberry lacto-fermented soda, the vanilla recipe and some of the decarbed cannabis I worked on early this morning.
I couldn't spend too much time outdoors in the garden and herb area yet as we had some torrential rain overnight that left EVERYTHING soaked. Granted we need this rain today, but it saddened me, and the dog, that we couldn't be outside much today.

Huh. I never thought of that. You can use yeast to carbonate water? Is that what you use the yeast for?
I ask because when I think of soda, I think of bubbly water. Please let me know how that works.

Did you have a stock of vanilla beans? Last time we tried to buy some they were like $27/lb or some ridiculous amount....
Not sure about the amount I had in weight, but I had purchased two vanilla beans and it cost me about $10... I have been tying to keep an eye out for good pricing online, but nothing yet.
Vanilla beans are ridiculously expensive. Every once in a while you can find them online on sale but not very often. When I do I make lots of vanilla to use. Spiced rum is my favourite but I have used vodka too.
I have vodka too but I was watching a YT video a few weeks ago by raincountry and she made hers using the spiced rum; so I figured... why not? I do have some more vanilla beans I ordered online and when they get delivered- hopefully tomorrow, I'll be making another batch using the vodka. Nice to be able to have a selection.
I'm thinking the spiced rum vanilla would be perfect for making butter cream icing or my canna-butter chocolate chip cookies, whereas the vodka infused vanilla would be good for other baking.
AND YES!! The prices keep going up and up... wish I knew someone who lived on Madagascar.
howdy @goldendawne.. I like spiked rum! I'll take some of that while I'm watching you make the other stuff. Hey you need to grow vanilla beans if they're $10 for 2 beans! holy moly I think you should get started on that project right away! lol. God bless you both!
Homemade vanilla - very nice - apparently the beans are so expensive because the bees that pollinate them only live in area of the world, so they have to be hand pollinated.

Not just yeast.. I used champagne yeast which is specifically for a carbonation into a drink. I had originally purchased it to make apple cider (as the directions for making this you MUST use champagne yeast).
I'll be sampling the lemon-lime soda this weekend and I'll for sure let people know how it goes.
So with Champaign yeast, I can carbonate my water? And add any flavor I want to it?
This could get interesting. I will follow along. I'm sure my wife will be pleased to hear that we can make a soda from scratch.

I do kombucha. I tried ginger bug once, but that never really worked very well for me. This looks fun, I may need to try it!
