ULOG 23: Our Food for a Week, Adobong Matanda

I just want to share with you one of our viands for a week while we were in the forest. It's called "adobong matanda." To be honest, I have no idea why they named it like that. "Matanda" is a tagalog word which means old in English.
While we were resting in one of the sitios (a territorial enclave that forms part of a barangay. Typically rural, and is usually far from the center of the barangay), we bought a tiny pig and cooked it. Since we wanted to preserve the pork meat and let it last for a week, we cooked it into adobong matanda.
Adobong matanda is basically pork meat cooked with just two ingredients- garlic and salt. You just sauté the pork meat into garlic, add salt and let the natural oil of the meat cook itself.
