Black Rice & Veggie Salad {With the First Beet from the Garden!}

Hey there friends! So yesterday I shared an update how our garden is looking right now, but since I had actually taken the pictures a few days prior I've got another fun update today. We pulled our first beet! Besides the herbs, this is the first thing we've gotten to eat from the garden this year. Always fun to harvest the first items after the hard work that was put into getting everything going. Once again, shout out to @dksart for doing the dirty work so I have beautiful things to make in the kitchen!

Can you tell what part of the salad it's in? Once I show you what the beet looks like inside you should easily be able to pick it out. 😉 But first, a picture straight out of the soil!

A perfect specimen! I even used it as a prop in my #seven77 support on Twitter yesterday. But the real beauty of this Chioggia variety of beet lies within...

Sliced the opposite way the center looks like rings, but I kind of like it sliced this way, as well. Just too pretty to cook, as the color meld together once it's cooked. I decided to shred this little beauty up raw to retain some of the vibrant color. Plus it's in the 90's here right now, so raw is definitely on my radar to keep the kitchen cooler!

I already had chickpeas cooked, they just got thawed out from being in the freezer. I pretty much always have 1.5 cup portions cooked ahead of time (that's about the amount in one can). Which meant the only thing I had to heat up for this meal was the black rice. An easy 30 minutes on the stove top, as I prepared everything else while the grains cooked through! It was the last of the lovely black rice, which amounted to about 3/4 cup before cooking. The rest of the salad included:

  • 1 shredded beet & the chopped greens
  • 1 large carrot, trimmed & shredded
  • 1/2 cup chopped celery stalks & leaves
  • 1/3 cup dried cranberries
  • 1/4 cup each chopped fresh mint & parsley from the garden
  • 2-3 tablespoons hemp hearts
  • drizzle of key lime white balsamic

Luckily this made enough to last for tonight's evening meal, as well! Nothing beats a meal inspired by the garden. I hope for many more meals like this to come as the season progresses! The first squash are growing quickly, so they might be some of the next to grace our table. Though not before the blossoms which I am planning on plucking tomorrow for a vegan pizza. Stay tuned... 😉

Still not 100% sure, but this is starting to look a bit like butternut squash to me. Or as @puravidaville and I have dubbed it for short: butt squash. Sometimes you just don't have time for two extra syllables. 🤣 I'm pretty sure this one is a volunteer from compost, so that wouldn't be surprising since we've had acorn squash in the summer for the same reason. Which upon further inspection, we might have one of those growing, too.

Before I go chow down on my salad, I also want to share really quickly how awesome it has been joining in with the group meditations in the @naturalmedicine discord. I have been thankful to be able to join in consistently on Wednesdays, but also popped in this afternoon for the Saturday session. @bewithbreath does such a great job leading the meditations, and I leave feeling peaceful and refreshed each time! There is definitely something special about joining in with others for that time of self care. I am very mindful of my fitness and the food I put into my body, so it is a natural progression for me to continue my path with more mindful approach to my mental and spiritual wellness. This is my kind of salad yummy

well tbh i am a food lover but freshly plucked fruit or vegetable taste the best also when you did alot of hard work to grown vegetables and when they were ripped it feels great to eat.

They really do taste so much better when freshly picked. There are so many things I just won't buy from the grocery store now because they have no flavor when compared to locally grown!

Oh I've been cooking with black rice a lot lately! Tasty.

Love beetroot but hubby can't eat them. Found purple carrots the other day.. wow!!! I must try growing them. How exciting you have pulled one from yiur garden. Home grown is the best!!

I think the black rice is my favorite variety! I'll have to get more soon. One of my favorite local farmers is growing purple rice, so I can't wait to see how that comes out!

Hooray for purple carrots! We haven't had much luck growing carrots yet, but we'll have to try again soon. So much fun stuff to try!

I know right! Purple rice.. nice!!! I think growing from seed is best best with carrots but I end up with stunted woody things!!!

Isn't it a pretty type of beet? I've seen them here at the farmers market, but I don't think they often carry them in stores. Gotta love some childish veggie humor, right? :)

Okay, #1 I love that you have been meditating and are feeling the benefits both physically and spiritually #2 this black rice, gorgeous self grown beet and carrot, chickpea bowl is life!! Seriously, every freakin ingredient in there is amazing and you can’t beat that aesthetic :). Swinging for the bleachers @plantstoplanks, you’re killin it.

The butt squash is even better when it’s stuffed 🤷🏼‍♀️

I am reallllllly digging the group meditations. It just brings a whole different level to the experience. Plus I am still having trouble making it a daily habit on my own, so I love having the accountability.

I was hoping to pop this one out for FFF, but as usual Friday night came and went. At least I got it out before Saturday ended, haha! I'm about to go outside and check out my butt squash, or whatever it is. Pretty sure it's butt, though. 🤣
