Delicious, sometimes healthy, vegan recipes.

There are so many delicious, not-so-healthy vegan recipes out there and we can't wait to share our favorites. Our philosophy: everything vegan is already made from plants, so why stress about it. If it's delicious, eat it!

Check out this Sweet and Spicy Pineapple, Coconut and Jalapeño Stir Fry

Serves 2

Ingredients

1 Tbsp Coconut oil
2 Tbsp Soy sauce
1 cup Tofu, extra firm, cubed
1/2 cup Red onion, sliced
2 tsp Ginger, fresh, minced
2 cloves Garlic, minced
5 Mushrooms, button, sliced
1/2 cup Pineapple, cubed
1/4 cup Jalapeño, sliced
1/3 cup Water chestnuts, canned, drained
1/2 cup Bell peppers, red
1/2 cup Bell peppers, orange
10-15 snow peas
2-3 Baby bok choy, quartered
4 Tbsp Coconut cream or coconut milk
1/2 Lime, squeezed
Salt and pepper to taste
2 tsp Sesame oil
2 Tbsp Agave
1/2 cup Basil, chopped

Garnish

Basil
Chives
Dried coconut, unsweetened

Instructions

Add the coconut oil, soy sauce and tofu to a wok or sauté pan and cook for 2-3 minutes over medium-high heat.

Add the other ingredients and cook for 5-10 minutes or until the vegetables are tender.

Garnish and serve right away.

That's awesome! It's more of a hobby at this point, but maybe it'll become a full-time gig if I'm lucky. How about you? Your blog looks great! How long have you bee at it?

We're currently doing our food blog part time, as we both have jobs. But hopefully, by the end of the year, we can bring in some extra income from it.

It's been about 6 months now.

Hi WElcome to the vegan community love the stir fry, looks pretty healthy to me. If you are living plant based diet there is n need to stress about it because its all healthy however there are many pre-packaged vegan products that are not, including refined and processed foods, i dont think these should be encouraged tbh because we have already been poisoned enough by modern culture. Plant based is about staying natural and healthy to give our bodies the optimum nutrition they need to function. hope i'll see some more amazing recipes like this from you ✌️

Hahahha you're probably right about the packaged foods, but they just taste soooo good and I can't help but get excited about any vegan products :) I'm a vegan for ethical reasons, so it's a bit hard for me to find the motivation to be super healthy (sugar addict all the way - even managed to slip sweet pineapple and agave into a veggie stir fry ), but I'll keep trying :)

If you are a vegan for ethical reasons, all the more reasons to stay away from some of these packaged goods, basically it depends if they are made by small companies, organic growers, sustainable sources and using natural ingredients? But for instance in the UK the supermarket giant Tesco does a whole range of vegan products, but i cant support that, because the shop itself is unethical, they stock meat products contributing to the ethical/environmental problems on the planet. It might be convenient they stock vegan products so more people are enticed to veganism but then they are missing the point about the ethical side. sorry if im a bit hardcore, im a food anarchist and purist, i think we need to boycott the big companies and support the small guys. nothing wrong with sweet tooth there are many natural and more sustainable and healthier sugar alternatives, like agave, coconut sugar and molasses are super good (than white refined sugar that tends to be unethical). tbh i used to have sweet tooth but since I became the vegan i am today i dont crave it as i used to. You might like post on raw chocolate and homemade coconut butter, check em out if you have time. :)
