Vegan lifehacks - cooking shortcuts: garlic
I thought I'd share some tips to my fellow Steemian cooks out there. Since I've been eating a plant-based diet, I now make almost 100% of my meals at home. To save both time and money, I buy some ingredients in bulk and then pre-process and freeze them, so when a recipe calls for a tablespoon of minced garlic, I'm ready to go.
Here's my method - I will buy already peeled fresh garlic either at Costco or at a local Asian market. It's way cheaper than buying unpeeled garlic in the supermarket and you can skip all the tedious peeling and mincing.
I just fill up my food processor and process the garlic cloves. I add a tablespoon or so of canola or olive oil just to make sure the consistency is right. I then use a tablespoon measure and scoop out the processed garlic and place it on some parchment paper on a pan/plate, etc. I then pop it in the freezer and the next day, place the frozen garlic into plastic bags.
The same method can be used for ginger, basil or cilantro. I harvested this cilantro from my garden this past summer and still have plenty in the freezer to add to soups, or sauces.

I like to make a giant batch of rice in our rice cooker then freeze the left overs. Then I just put it in the fridge the day before we want it. We usually do a stir fry type of meal with the rice and left over or frozen veggies
