Recipe: Tumeric pancakes with spinach filling
Hello friends,
Today I want to share a yummy recipe with you. It is tumeric pancakes with spinach and tomatoe filling. These taste so good and they are kinda healthy too. 😄
Here is the recipe:
Ingredients (2 Portions):
Pancakes:
- 100g flour
- 150ml plant milk
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon tumeric
- 1 dash of black pepper
Spinach filling:
- 350g frozen spinach
- 1 onion
- 1 glove of garlic
- 2 tablespoons of "creamer" (I usually use cashew butter as it makes it amazingly creamy, but in the video I used rice cream because I made it for a friend with nut intolerance)
- 1 dash of tumeric, salt and pepper
you also need:
- oil
- tomatoes, 1 or 2 depending how much you want
- 50g pine nuts
Method:
Here is a video:
Pancakes:
Mix the dry ingredients first and then mix in the plant milk. Fry the pancakes in the desired size in a little bit of oil, flip when the top is bubbly.
Spinach filling:
Sautee the minced onion and garlic, when they are fragrant add the spinach and cook until wilted or heated through. Add the spices and your creamer of choice.
Also:
Roast the pine nuts and chop the tomatoes.
Assemble:
Layer the pancakes with spinach filling, tomatoes and pine nuts.
This dish tastes best with warm pancakes and warm filling 😍
