I’m a bit lazy and I use grated ginger a lot. I either grate it manually or whiz it in the food processor, freeze it in ice cube trays, and then store the cubes in a Ziploc bag for easy use.
I think you're very practical. And although ginger stays fresh for a while, I think freezing it in cubes reduces the chance of it spoiling.
Some vegetables enhance their flavor when frozen, while others don't, and from what I've seen, ginger is one of the ones that does.
