Yes, I've eaten sweets made from vegetables, like carrot halwa, bottle gourd halwa, potato halwa, parwal sweets, etc. But carrot halwa and potato halwa are my favorites. I don't have to think twice about making them. They do take time, but they do take time and effort, and the taste is amazing, there's no doubt about it.
Carrots are cooked in milk and then sugar is added. Khoya is added, and desi ghee is added, enhancing the aroma and flavor of the carrot halwa. In Swatantra, we also garnish it with cashew nuts, which enhances its flavor and makes it rich in nutrients.

No, I don't face any difficulties while making this recipe. I'm very adept at making this halwa. It just takes time and effort. It requires constant stirring, because if you leave it for even 5 minutes, it quickly starts sticking to the pan. So I keep stirring it constantly so it doesn't burn and a nice aroma develops. Otherwise, I never have any difficulties making it.
