Even during the Joseon period (1392–1910), when it was frequently brought to the king's palace for his meals, it was regarded as a local dish.I had made numerous trips to Gwangju, which is close to Sunchang, where I used to reside, in order to get gochujang. Since then, a small hamlet dedicated to gochujang artists has been constructed. They were dispersed all over the place before, but now they're all in one place. The label of a tub of gochujang in the Korean grocery shop may read "Sunchang gochujang," but that's not the same thing. The authentic Sunchang gochuchang varies from house to house and is created by hand. It is only available for tasting in Sunchang; you cannot purchase it anywhere.
