The aroma of chaat wafting through the liveliness of the market.
As we approach a chaat shop, the sound of tikkis frying on the pan and the strong aroma of spices double our hunger. Crowds of people surround the shop, friends standing with plates in hand, and the sound of conversation fill the atmosphere with joy.
The hardest part of arriving at a chaat shop is choosing what to eat. There's no shortage of options: crispy tikkis with yogurt, dried ginger, and tangy mint chutney. Spicy and tangy water that makes your eyes water, but your heart says, "One more!". The perfect combination of boiled potatoes, chickpeas, and spices, topped with crispy papdi.
The shopkeeper's skill is amazing. Quickly pouring yogurt, sprinkling roasted cumin seeds and red chilies, and finally giving us a plate adorned with delicate sev and pomegranate seeds—the whole scene is simply amazing.
