Your breakfast looks so rich and creative! Adding ripe plantain to the moi moi is such a thoughtful idea, and the Caribbean pap with ginger and cinnamon sounds amazing. A touch of apple is simply out of the world, you're indeed a creative chef! You explained the steps so well great job exploring new flavors, and success!
