Hi guys, it's good to begin a new season with flavour all round the air.

This first week is interesting because it helps me explore and think of a recipe to twist with my local taste. So I prepared moi moi, it is Nigerian local desert that is prepared with beans. It is protein as so it is commonly eaten with carbohydrate either rice, pap or any grains or with garri (cassava flakes).

So in this contest, I want to show my own recipe of preparing moi moi, I like adding ripe plantain to it so my baby can eat. So I added ripe plants to the beans and blend till smooth.

Let me show you step by step on how I prepared my dish.

Ingredients

  • Beans
  • Ripe plantain
  • Pepper
  • Onions
  • Crayfish
  • Seasoning to taste

For the pap

  • Guinea corn
  • Yellow corn
  • Soy fresh milk

Soaked beans in a water then wash off the peel, add other ingredients and blend together

I added 1 piece of ripe plantain and blend it together as seen.

After blending I added crayfish, cubes, salt, oil and spices to taste then cook it.

I scooped it inside a nylon, portion by portion then steam it on fire till done


It's time to prepare my Caribbean pap, so I have my pap, I used yellow corn/guinea corn pap, I added ginger and cinnamon to the pap.

Moi moi is a local desert from Nigeria, It is eaten by almost every Nigerian and we have different recipe in preparing it. Anyhow you prepare it as long as you use one ingredient which is beans as the active ingredients then you are preparing moi moi.

It is mostly used as breakfast and some people use it as main dish some people use it as deserts.

As for the Caribbean pap, after twisting it with cinnamon and ginger, I later find out that it is eaten by people from other country. I was actually thinking I invented it but then a letter discovered that it is eaten by the Asian and it is called porridge corn.

What global element or idea did you add to give it a twist?

I think of what to use to give it a twist then I finally had an idea of making Caribbean pap. To make this possible, I infused cinnamon and ginger then use the water to make the pap. This inspiration was gotten from the middle eastern and Asian breakfast spices.

How did the new version taste or look compared to the original?

It taste really unique, cinnamon have a very nice flavour. Therefore, the taste of the Caribbean pap can never be compared to the original pap.

The flavour and the spicy taste of ginger give my dish a international taste.

What inspired your creativity in this dish?

I like having different spices in my kitchen and so I thought of a taste of cinnamon and ginger in a pap and I was inspired to give it a try. I wasn't disappointed because I got more than the taste I needed.

Then I like adding ripe plantain to my beans while making moi moi or akara and it will give it that sweet taste to entice my daughter to eat. Ever since I noticed that I have been preparing my moi moi that way.

Beautiful recipe ma’am. You are the second person I am seeing that adds plantain to moimoi. I think it’s high time I try it out. And I am just hearing of Carribean pap for the first time. That ginger and cinnamon twist is amazing. I heared ginger in pap is great but haven’t tried it out yet. Weldone
