Recipe for Healthy Dinner: Mediterranean casserole with millet ๐Ÿ…๐Ÿ†

Hi everyone! Two weeks ago my husband was having his birthday, so I decided to prepare a special dinner for him โ€“ something that tastes like pizza ย ๐Ÿ•๐Ÿ˜‚ but is healthy and light.ย 

I replaced a regular yeast dough with millet which is naturally gluten-free, alkaline and soothes our intestines.

What was the result? Check it!ย 

Ingredients:ย 

  • ยพ glass of milletย 
  • 2 small zucchinis or 1 bigย 
  • 1 red pepperย 
  • 1 violet onion
  • 1 aubergineย 
  • 2 cloves of garlicย 
  • olive oil
  • 200 ml tomato paste
  • a few dried tomatoesย 
  • herbs: basil, oregano, marjoram, rosemaryย 
  • Himalayan saltย 
  • black pepperย 
  • mixture of sunflower seeds, pumpkin seeds and sesameย 
  • tofu, e.g. with herbs or halloumi cheese (non-vegan version)ย 

Preparation:ย 

1. Prepare the millet. ย ย 

Put the millet in a dry pan and roast for a few minutes. Then rinse with water. Pour ca. 2 glasses of water, add a pinch of salt and cook under a lid until the millet absorbs the water. Donโ€™t stir it when itโ€™s cooking. By the end of cooking, reduce the heat to minimum. ย ย 

2. Prepare the vegetables. ย ย 

Slice the aubergine and zucchinis, chop the pepper and cut the onion into halves and then into slices. Sprinkle the aubergine with salt and leave for a few minutes. Grill the vegetables for a moment on both sides on olive oil. ย 

3. Prepare tofu or halloumi cheese. ย ย 

Slice the cheese and grill for a few minutes on both sides (preferably, on a grill pan). ย 

4. Cover a heatproof dish with tomato paste mixed with herbs.

ย Then put half of the cooked millet on it. Next layer the grilled onion, pepper and zucchini and dried tomatoes cut into strips. Season the vegetables with herbs, pepper and salt.ย 

5. Put the second layer of millet on the vegetables.

6. Put a layer of aubergine slices on the millet. Put garlic on each slice of aubergine.ย 

7. Lastly, put the grilled tofu or halloumi cheese on top of it.

Pour with the remaining tomato paste, sprinkle with herbs, pepper and salt as well as with sunflower seeds, pumpkin seeds and sesame.ย 

8. Bake the casserole in the oven for 15-20 minutes at 180 โ„ƒ . ย ย ย ย

Looks delicious and healthy. Himalayan salt it's a great choice because is very rich in mineral content.

Yes it is and I always use Himalayan salt in my recipes.

Hello Friend how are you? very good to be a recipe, I usually like to prepare many baked vegetables but I like gratins I am a cheese lover even though this recipe looks very good I want to try it
