Fruits&Veggies Monday - Raw tomato soup

Fully raw tomato soup recipe🌱😍🍅

I'm trying to eat as much raw food as possible lately, because as a type 1 diabetic I noticed that my blood glucose level always dicreases when I eat mostly raw food. So althaugh I love soups, I didn't eat them often lately because if you cook the veggies, they lose their nutrient density. For this reason I started experimenting with raw soups, and this one turned out to be my favourite!! 😍 It is full of nutrients and very delicious.

Ingredients: 4 tomatoes, 1 red bell pepper, 1 carrot, 1/4 of a small sweet potato, 1/2 celery stalk, 1 tbsp nutritional yeast (optional), some fresh or dried basil. 🍅🌶🥕🌽🍄🥒

Place everything in a blender and blend it until smooth. Pour it in a bowl and add some chopped zucchini, mushroom, corn, cooked kidney beans and chopped sorrel to it. It is sooo yummy that I've been making it every day in the last couple of days 😄

Tip: if you prefer warm soups, blend it for approx. 6 minutes, the it becomes warm 😊

I don't wanna convince anyone to follow a fully raw lifestyle, but I hope that I can at least encourage you to eat more raw food in order to be the healthiest you ever 🤗

I love soup but never had raw soup before. I cook it but not for long, try not to destroy everything good in veggies :)

Yum! It's finally getting warm enough to do more raw food here. I definitely feel lighter and more energetic when I do that more in the summer time. I still do a good portion of cooked just to be able to get enough calories in for the day, but reduce my proportion in favor of all the fresh living produce available in the warmer months!

Looks good! Well done on introducing so much raw into your diet. Perhaps add cinnamon which balances sugar levels, a wonderful spice for diabetics

Ohh yes, I eat a lot of cinnamon every day. I simply love it's taste :)
