As I understand our skin produces 7-dehydrocholesterol. The UV B rays from the sun convert this into Vitamin D3. Our kidneys convert it to Vitamin D2.
The UVB spectrum is filtered by atmosphere, sunscreen and windows.
So we need to get sun when the UVB rays are out. It might be better to catch some rays at noon.
Sun beams pass through more atmosphere in the morning and evening than at noon. I understand that people in Northern climates should try to catch rays at noon during the Winter.
It also turns out that fructose can destroy vitamin D. So people should avoid products like invert sugar, high fructose corn syrup (HFCS) and Agava Nectar as these produce have free fructose molecules.
