Use parsley in your recipes: A rich source of vitamin K

According to various online sources, parsley is a very rich source of vitamin K.

While you have to consume large amounts of other types of food that contain vitamin K, you would only need to eat about ten sprigs of parsley to ensure that you reach daily intake.

This means that the lowly and largely underestimated parsley is in fact a superfood that can provide you with high amounts of vitamin K by only consuming a few grams.

Vitamin in dried vs. fresh parsley

It looks like dried parsley contains less vitamin K than fresh parsley. 

Therefore, in order to reach recommended daily intake, you would need to consume more than 13 teaspoons of dried parsley, which is a big difference, compared to fresh parsley, where you would only have to consume about ten sprigs.

Have you ever tasted fresh parsley on its own?

Sometimes, adding some type of salad oil, salt, lemon, vinegar, etc. to it can make fresh parsley more edible.

However, there are people who enjoy the “greeny” taste of fresh parsley without adding anything to it.

Although deciding to cook parsley makes it more edible, it reduces its nutritional value, and its vitamin K content, as a result.

Therefore, it should be added during the last stage of the cooking process, in order to keep as much vitamin K and other nutrients as possible.

Vitamin K in dried parsley vs. other dried spices

Although dried parsley is rich in vitamin K, and ranks a bit higher than dried oregano in that respect, you would be surprised to know that there are dried spices that contain even more vitamin K than parsley.

Actually, it’s amazing that one teaspoon of dried thyme leaves contains roughly three times more vitamin K than one teaspoon of dried parsley, while one teaspoon of dried basil or dried sage contains twice as much vitamin K as one teaspoon of dried parsley.

Undoubtedly, dried parsley is a very rich source of vitamin.

However, there are other dried spices that are even more potent sources of that vitamin.
