The Day I Made Blueberry Cinnamon Cake

Yesterday I made that blueberry cake, but now I have something even more delicious: blueberry cinnamon rolls.

Complete with delicious, sweet melted chocolate. First, let's make the blueberry compote. The ingredients are:

  • 326 grams of blueberries

  • 50 grams of sugar

  • 2 tablespoons of lemon juice

  • 1 whole La Fancy cinnamon stick

  • 1 teaspoon of lemon zest

  • 1 teaspoon of cornstarch dissolved in 50 ml of water.

For the dough, I mixed 180 ml of lukewarm milk, 50 grams of sugar, 7 grams of yeast, 360 grams of high-protein flour, 55 grams of margarine, and 1/2 teaspoon of salt.

Then, add the flour. I don't need a mixer; I just use my hands.

Once it's mixed, add the margarine and salt. Knead until the outside is smooth, then let it rest for 60 minutes. While I'm waiting, I'll make the cinnamon filling. Just use 90 grams of brown sugar, 90 grams of butter, and 1 tablespoon of cinnamon powder. Mix until it forms a paste.

After 60 minutes, I deflate the dough, knead it, and press it again for 20 minutes, then make it elongated like this.

After that, I fill it with the cinnamon filling and blueberry compote I made.

Then I roll it up gently and cut it with string to make it neater.
For one recipe, this is perfect as a cinnamon roll snack. Finally, optionally, I add leftover crumbs from yesterday's cake. Bake at 180°C.
