Today I Made Red Snapper Soup

As an Acehnese, when I see fresh fish like this, especially red snapper like this, I always want to make fish soup.

If you're in Aceh, this is a must-try dish.

Savory, fresh, yet warm, the distinctive Acehnese spices are palpable. It's also very easy to make. First, blend the spices, which consist of:

10 shallots
7 garlic cloves
5 curly chilies
5 bird's eye chilies
1 thumb-sized piece of ginger
2 finger-sized pieces of galangal
1 thumb-sized piece of galangal
1 teaspoon shrimp paste
1 lemongrass stalk
3 kaffir lime leaves
2 bay leaves
1 teaspoon turmeric powder
1 teaspoon coriander powder
1/2 teaspoon nutmeg powder
1/2 teaspoon black pepper powder
800 ml water
1 teaspoon salt
2 teaspoons bouillon powder
1/2 teaspoon sugar
1 kg snapper Red
Next, fry the shrimp paste, then add aromatics like lemongrass, lime leaves, and bay leaves.

Add the blended spices, then add the turmeric, coriander, nutmeg, and ground black pepper.

Sauté until cooked, then add plenty of water.

Season with salt, bouillon powder, and a little sugar. Add tamarind and dissolve. Stir well, then add the sliced red snapper.

Also add the cucumber slices, as this is the signature flavor of red snapper soup.

Let's cook over medium heat until boiling, or until the cucumber is soft.
