ingredients

The next step is to grate these bananas with your grater and not a blander. This will give a nice texture needed to blend with other ingredients. Put your ingredients: dry fish, periwinkles, crayfish, red pepper, onions, red oil in a cooking pot. Add some quantity of water (about half a litre) and then put the pot on fire to cook.

Allow it on fire for 10 to 15 minutes, stirring well to mix. Add the grated bananas by cutting small quantities at a time to the pot, allowing it on fire for about 10 minutes. Then use a table knife to cut the semi-solidified content, making it blend like a semovita. The dish is done.

What is the name and story behind your signature dish?

The name of this dish is locally called "Oto Mboro" in the southern part of our country, Nigeria. The story behind this dish is that it is a special dish cooked for young women in their fattening room, while preparing them for their marriage. This dish nourishes their bodies, making them look attractive to their husbands on the day of their traditional marriage. It is also cooked for babies during waning to boost their immune system, making them look bouncing and healthy. How does it reflect both your local roots and global imagination?

Of course, In as much as this dish has a local flavour that is irresistible, the ingredients in preparing it is found globally. Banana is eaten, both ripe and unripe by almost every human, globally. It is a continental dish that could be cooked anywhere.

What makes it stands out from every other dish you've made?

This dish stands out from other dishes I have made because of its energy in preparing it. Also it is not prepared always like other conventional meals, but on special occasions.

If you could serve it to anyone in the world, who would it be and why?

If I were to serve this dish to anyone in the world, I would serve it to my friend in Pakistan, @ahsansharif. I want him to also taste a special meal from another part of the world other than a dish from his country. I know he would like it. It is rich in nutrients.
