Today is my weekly holiday. So, I decided to make delicious vegetable khichuri with winter vegetables. Let's enjoy delicious and nutritious vegetable khichuri together. Now I am presenting the tutorial of delicious vegetable khichuri that I made for my Steemian friends.
Before presenting the vegetable khichuri tutorial, I would like to introduce its ingredients. Below, I am highlighting the ingredients-
ingredients to make the vegetable khichuri:-

| Lentils | ½ cup |
| Carrots | 1 cup |
| Cabbage | 1 small bowl |
| Sweet pumpkin | 1 small bowl |
| Potato | 1 small bowl |
| Chopped onion | 1 cup |
| Carrot | 1 cup |
| Papaya | 1 cup |
| Onion leaves | 1 quantity |
I also added several items and spices such as
| Tomato | 1 piece |
| Green chili | 4-5 pieces |
| Turmeric powder | 4 teaspoons |
| chili powder | 3 teaspoons |
| Salt | to taste |
| Ginger paste | 4 teaspoons |
| Garlic paste | 4 teaspoons |
| Bay leaves | 3 pieces |
| Ghee | 3 teaspoons |
| Coriander powder | 1 teaspoon |
| Jeera powder | 1 teaspoon |
Using the above ingredients, I am now starting to make delicious vegetable khichdi and am presenting the tutorial.
Tutorial of the vegetable khichuri: -
🥣Step 1:-
- First, I mix 1/4kg of rice and ¼ kg moong dal in a pan.
- Then add half a cup of lentils to the pan.

- Mix the two types of pulses and rice together and wash them with clean water several times, and let the water drain.

🥣Step 3:-
- Now I put a pan on the stove, and add a sufficient amount of soybean oil there.
- When the oil is hot, I add potatoes, papaya, carrots, sweet pumpkin, peas, and salt in it. Mix all the items with the help of a spoon.
- I fry all the vegetables for 5 minutes.
- After frying, I take the vegetables into a bowl.

🥣Step 4:-
- Now I add 3 spoons of ghee to that pan. I wait until the ghee turns liquid due to the heat.
- Then I add the chopped onions

🥣Step 5:-
- When the onions are fried and brown, I add two spoons of ginger paste and two spoons of garlic paste.
- I fry the ginger and garlic paste for a while and add all the spices (turmeric, cumin, chili, and coriander powder) in it.

- After adding the spices, I fry them again for a while and add a little water.

- When the spices are well ground, I pour the previously drained rice and daal mixture into it, as well as 4-5 green chilies.

🥣Step 8:-
- I mix all the items well and fry them in a mixture of oil and ghee for a while.

- Now I put the previously fried vegetables in a pan. And I mix them with the milk.

- After some time, I add chopped cabbage and onion slices and mix well again.

- Now I add more water to all the spices in the pan so that all the items can be cooked. And I cover the pan with a lid.

🥣Step 12:-
- I cook the vegetable khichuri on medium heat for 15-20 minutes. Occasionally, I stir it with a spoon so that the khichri does not stick to the bottom of the pan.
🥣Step 13:-
- When the water in the pan reduces, I add chopped coriander leaves and mix them with the khichuri again.
🥣Step 14:-
- When the water dries up well, I remove the khichuri pan from the stove and let it cool.
- Then I pour some khichuri on a plate to serve.
- With that, I finish making delicious khichuri.
🥣Step 15:-
- Vegetable Khichuri is very tasty and enjoyable. It is even more enjoyable when it is accompanied by fried brinjal, burnt chili, and dried Chilli.
- So to make khichuri more enjoyable, I make fried brinjal, burnt chili, and dried chili.

- Now I upload a picture with the prepared vegetable khichuri
Conclusion:
The main purpose of the food we consume every day is to provide nutritious food to the body. None of us is interested in unhealthy food. Eating a balanced diet is very desirable for us. Considering that aspect, the prepared vegetable Khichuri is a very nutritious food. Every item here carries protein, calcium, protein and minerals which we all need right now.
