"Recipe of the Day, Week No. 15: (Nigerian jollof Rice with few ingredients)

Greetings to all wonderful chef, I welcome you all to my blog. lt is another new week, so I'm here again to present my recipes of the day with you.

Cooking healthy recipes for family is my every day concern because there is an adage the say... "we are what we eat"... which means if we eat nutritious meals, it will definitely reflect on our body and eating unhealthy meals results in poor health.

Today, l want to share with you how l cooked my Nigerian jollof Rice with a very few ingredients. Here in my country, jollof rice is often served in every occasion, which means if you attain any occasion in some parts of Nigeria without eating jollof rice, it means the occasion is not complete. This meal usually taste yummy and delicious.

List of my ingredients

2 cup Rice

1 shachet of Tomatoes and 2 piece of Fresh

3 Seasoning cube

4 different Spices

Half teaspoon of Salt

4 fresh Pepper

Handful of Crayfish

2 piece Ginger and garlic

1 Onion

Small quantity of Vegetables oil

Preparation.

The first step:
l properly Washed my desire quantity of rice in a cool water and transfer it into a clean pot, put on fire to parboil it for some minutes.

After parboiling, I kept it aside and I prepared all other ingredients as shown in the picture below.

Now let's start, putting everything in the pot to make a dish. I put a pot on the fire and allowed the water to get dry before l pour a small quantity of vegetable oil.

I allowed it to heat a little before l add my chopped onion and stir fry 5sec.

After that, l add my chopped fresh tomatoes and allow it for a little while.

I added pasta tomatoes, ginger, garlic, salt, seasoning cubes, crayfish and pepper, then fried everything at once.

My next step was to turn the parboiled rice into the pot and mixed it with the ingredients in the pot that is already on fire. I stirred very well before adding measure of water.
I covered the pot and allow it to boil on a low heat.

After some minutes, the water dried completely, l taste for salt and other ingredients,everything blended. I added a little curry leaf for good aroma and onion.

Yes at this point our food is ready so I brought it down from cooker and dished into plates for consumption.

Here in Nigeria, we take rice as one of the most simplest and fast delicacies, so, 90 % of Nigeria citizens consumed rice weekly. The statistics does not talk's about only jollof Rice, but Rice in general and it different ways of preparations, namely: fried rice, coconut rice, pepper soup rice, stew rice and a lot more.

We love rice here because of it high content of carbohydrates that easily restores energy to the body and it can be consumed at any time of the day...be it breakfast, lunch or dinner.
