Recipe: Vegetable Kachuri.
Assalamu Alaikum friends, how are you all, I am also fine, Alhamdulillah. In the afternoon or evening, everyone at home demands a tasty snack item. Everyone likes to eat something tasty with tea. And if it is fried in oil, then there is no problem. Today, thinking about this snack, I made hot vegetable kachuri. I made it in a slightly different way from how it is made outside on the sidewalk or in hotels. All the ingredients I have made are always in everyone's kitchen. And the current winter season is full of various types of vegetables in the market. I have made this tasty kachuri with the vegetables of this winter season.

- Chillies 🌶️
- Coriander 🌿
- Chili flakes 🫙
- Cumin powder 🫙
- Coriander powder 🫙
- Salt 🫙
- Oil 🍶

Recipe
🫓 In a bowl Mix the flour, salt and oil to taste with your hands and then add water little by little to make a soft dough.
🫓 Once the flour dough is ready, let it rest for 1 hour.
🫓 First, wash the carrots, potatoes, chillies, coriander leaves, and onion without peeling them well. Grate the carrots and potatoes well with the help of a grater. Chop the onions, chillies, and coriander leaves finely with the help of a chopper. First, heat the oil in a pan and fry the onion, then add the chillies and fry for some time. When the onions and chillies are fried, lightly fry them with chili flakes, salt to taste, cumin powder, and coriander powder. When the spices change color, add the carrots and potatoes, stir, and leave for some time.
🫓 When the water comes out of the carrots and potatoes, add chopped coriander leaves and fry for some time and cover it so that it gets cooked well.
🫓 After 5 minutes, remove the lid and stir it. And give it some time to cool.
🫓 After 1 hour, take the flour dough and knead it with a little help of your hands. Then divide it into 5 with your hands.
🫓 I will make the hand support without the dough. So first I make the hand support round and press it lightly to enlarge it around the edges, then I fill it.
🫓 Once the filling is done, stop using your hands and press it with your hands to make it bigger. Make 5 kachuris in the same way.
🫓 Heat oil in a pan and add the kachoris one by one and fry them on medium heat.
🫓 All of them were fried nicely. And the kachuris were very puffy.
🫓 When the kachuris were fried, I served them with hot tea. It was very tasty and crunchy to eat.
