Grow to understanding.
I don't know why this happens in my life. Perhaps it's different for you, and you understand the value of everything around you from infancy. But for me, it happened differently, and I had to grow to understand many things, and this is not at all like understanding higher mathematics and organic chemistry.
For example, I didn't immediately understand drawing with graphite pencils; indeed, it took many years for me to love this activity.
And in the drawing, since I mentioned it, you can see at least two such instances, previously hidden to me. For example, I underestimated the importance and potential of bringing gardening and self-cultivation to life when I had the opportunity, and I underestimated pumpkin as a food item that could be quite tasty and in demand on my dinner table.
As a child, I wasn't at all attracted to the taste and smell of pumpkin, and it wasn't until my wife started cooking it for me that I realized that this was something I really liked.
Pumpkin stuffed with vegetables and meat became a welcome guest in our family.
Even the cookies my girls bake contain pumpkin.
I haven't tried candied pumpkin peel yet, but I think it will be another discovery for me that will shatter all my preconceived notions about my taste preferences, lol.

Oh, I think that's how it is for many people. We only slowly learn to appreciate the value of some things. Especially when things we took for granted are suddenly no longer there.
As a child, it was quite normal to make everything edible and everything else we needed ourselves. It was work, and I wasn't particularly interested in it. Today, I sometimes regret not having paid more attention to certain things.
As far as pumpkin is concerned, I can plead not guilty because we didn't have any at home. The only dish I can cook is pumpkin soup :-)

I can't boast about being able to cook anything with pumpkin, even though it was very readily available where I grew up.
I trust my wife to cook pumpkin; she's excellent at it, but I specialize more in smoking meat and fish, or pickling vegetables in barrels :)
