Nice to hear from you and happy holidays :)
We actually thought about a year ago the tree would not give us anything, but hopefully soon we will be having Avocado on toast for breakfast/lunch & dinner.

I believe that you will have many menu with avocado so I wanna share a recipe that I like so much:
1 avocado, 2 tablespoons of olive oil, 1 tablespoon of lemon juice, 1 slice of white cheese, 1 clove of garlic, 1 pinch of salt, black pepper. Mash all these ingredients with a fork or mix them in a blender. Cut a few cherry tomatoes in half and fry them in olive oil and add thyme. Toast the bread and put the avocado mixture on top, then add the fried thyme tomatoes on it.
