Jangjorim 장조림

The recipe for today is for jangjjorim, a salty beef side dish that is one of the most well-liked Korean side dishes of all time. A spoonful of white fluffy rice topped with a salty, chewy chunk of beef sounds good right about now! You don't need a big piece of the delicious meat because it is soaked and marinated in a soy sauce mixture for days. It's perfect for lunchboxes because it's supposed to be eaten with rice and other side dishes. When I was in Korea, my husband sometimes made jangjorim, but beef was so expensive in Korea. I truly like it. I looked forward to it! Lunchtime always made me happy.

Along with some basic side dishes like fishcakes, braised beans, and stir-fried anchovies, my friends and I enjoyed rice and kimchi. Even a sunny-side-up egg was considered a luxury for us at that time. A cooked egg over rice used to make me happy too. 😊
