"Recipe of the Day, Week No. 90: Egg yahkni pulao.

Assalamu Alaikum friends, how are you all, Alhamdulillah I am also fine. Today is the last day of 2025, December 31st. On this day, people eat different types of delicious food at picnics or at home in different ways. Today I also cooked pulao in a new way, no one likes to eat the same boring pulao all the time, so today I cooked this pulao in a different taste.

Ingredients

  • Polai rice 🍚
  • Eggs 🥚
  • Potatoes 🥔
  • Tomatoes 🍅
  • Green chilies 🌶️
  • Onions 🧅
  • Garlic 🧄
  • Ginger
  • Coriander leaves 🌿
  • Bay leaves 🌿
  • Cumin seeds🫙
  • Jain 🫙
  • Cloves 🫙
  • Cardamom 🫙
  • Cinnamon 🫙
  • Coriander powder 🫙
  • Chili powder🫙
  • Salt 🫙
  • Ghee🫙
  • Liquid milk 🥛
  • Water 🫗
  • Oil🍶

🍛 Chop the potatoes, tomatoes, green chillies, and onions. Grind the ginger-garlic paste with a pestle and mortar. First, add oil to the pan, add the chopped onion, ginger-garlic paste, and all the whole spices one by one. Add the coriander leaves and fry lightly. Add 3 cups of water to it to boil.

🍛 While the water is heating, I wash and soak the rice.

🍛 Lightly fry the chopped potatoes and boiled eggs in oil in a pan. Once the potatoes and eggs are fried, fry the onions in it for garnish.

🍛 In the oil in the pan, add the boiled spices and ginger-garlic paste, chili powder, coriander powder, salt to taste. When it is lightly fried, add the chopped tomatoes, add a little salt to it, fry for some time and add milk to it. Add milk and leave it for some time. When the tomatoes are lightly cooked, add the fried potatoes and fry the tomatoes and potatoes for some time.

🍛 When the potatoes and tomatoes are fried, add the hot yakni, soaked polao rice and egg to it and add salt to taste.

🍛 Add the chopped green chilies, coriander leaves and onion, cover and let it cook on high heat for 10 minutes.

🍛 After 10 minutes, I lifted the lid and saw that the rice was boiling. Then I reduced the heat of the stove and kept it for another 10 minutes.

🍛 After 10 minutes, remove the lid, add 1 tbsp ghee and cook on low heat for another 10 minutes. So that the flavor of ghee is well absorbed in the Egg yahkni pulao.

🍛 After 10 minutes, turn off the stove and leave it for some more time with the lid on. After 15 minutes, remove the lid and serve in a serving bowl.

In this Egg yahkni pulao, you can use basmati rice instead of rice and 1 teaspoon of sour curd instead of milk.
