🌯🥑 Vegan Sweet Potato and Black Bean Tortilla with Avocado Cilantro Sauce and Spicy Cashew Sour Cream 🌯🥑
Good morning fellow steempunks. There's something about the flavor combo of roasted sweet potato and black beans I cannot resist. If not for my hubby, I wouldn't mind eating this dish every day but he doesn't like eating the same thing twice in a row. Though I might think he would make an exception for this yummy treat.
If you don't like cilantro, just like my hubby you could use fresh parsley or celery herb (or celery leaves) instead. I first blended the avocados sauce without the herbs and divided into two batches.... 1 with cilantro (yum yum ;) ) and one with celery herb. Happy faces all around!
🌯🥑 Vegan Sweet Potato and Black Bean Tortilla with Avocado Cilantro Sauce and Spicy Cashew Sour Cream 🌯🥑
Ingredients (serves 3)
6 wraps or tortillas
Salad greens of your choice
Roasted veggies and beans
3 cups sweet potatoes, cubed
1.5 cup cooked black beans
2 cups bell pepper. sliced
1 tbsp olive or coconut oil
Herb mix
1/2 tsp cumin powder
1/2 tsp smoked paprika powder
1/2 tsp garlic powder
1/2 tsp onion powder
1/2-1 tsp chili powder (or to taste)
1/2 tsp turmeric powder
1 tsp dried oregano
Sea salt and black pepper to taste
Avocado Cilantro Sauce
2 small avocados or 1 big
1/2 cup spring onion, finely chopped
1-2 cloves of garlic
1/2-1 cup fresh cilantro
1 lime, juice only
Sea salt and black pepper to taste
Spicy sour cream
3/4 cup cashews, soaked for at least 1 hour (overnight is best)
Chili paste or finely chopped chili peppers to taste
1/2 tbsp apple cider vinegar
2-4 tbsp unsweetened coconut milk
Splash of lemon juice
Sea salt and pepper to taste
Directions
Roasted veggies
- Preheat the oven to 400F or 200C.
- Combine bell pepper and sweet potatoes on a baking sheet. Sprinkle with herb mix and cooking oil. Toss well to coat and roast for 20 minutes or until potatoes start to soften and brown. Toss halfway through.
- Add black beans, toss to combine and roast for another 10 minutes.
Avocado cilantro sauce
- Meanwhile, add all avocado sauce ingredients to a blender and process until smooth. Set aside in the fridge.
Spicy sour cream
- Soak the cashew nuts in water for at least 1 hour. Overnight is best. If you forgot to soak the cashews you can soak them for 30 minutes to 1 hour in boiling water.
- Combine all the sour cream ingredients in a blender and process until creamy. Set Aside in the fridge.
Assemble the tortillas
- Heat tortilla in the oven or dry pan.
- Spread avocado cilantro sauce on the tortilla. Top with lettuce, sweet potatoes, black bean mix and cashew sour cream.
- Wrap and enjoy!

This sounds delicious! Something easy I can make where I am located. I usually soak and boil my black beans, although recently a friend of mine taught me to put an onion, lots of garlic, salt, dried spicy peppers, and a smidge of oil while boiling them. They taste amazing now, so much flavor! I bet they would make a nice addition to this recipe! Thanks for sharing!
