DIY: Aubergine salad

Hello my dear Steemians,
Today I decided to prepare a salad with some vegetables that we had at home. I love aubergine or eggplant so easy and delicious.

First, I cut aubergine into slices, appt. 1 cm thickness and then out them into bowla nd add some salt.

Here are the vegetables that I use: carrots, red pepper, onion and some garlic glvoes, all of them I prefer to cut into small pieces.

I decided to take mid-size tomatoes and remvoe the skin off.

Here are the tomatoes already cut and I usually remove the middle juicy part of it otherwise there is much liquid.

I fry all the vegetables separately and at the end I put them alltogetehr in pan and fry on low heat for about 5 minutes, so that the vitamins are still there. Once it is done, I leave the vegetables to cool over night and on next day you have nice aubergine salad.

Oh, your food looks so delicious here! And it’s vegetarian, too.
And now I’m really craving eggplant... But the only eggplants I have are seedlings, just 1 cm long.
