The taste of autumn: aubergine salad

Hello dear Fans,

 

Couple of days ago while shopping I saw some aubergine and thought that it was quite a long time since I prepared that. In our family only me who likes it that is why I do not do it so often. But I decided to buy some vegetables for salad this time.

 


PREPARE THE VEGETABLES


 

So, first of all you have to cut the aubergine into slices, put them into bowl and add some salt, that will take the bitter taste of them. You can leave them for couple of hours.

Then you have to prepare the other vegetables: I use carrots, normally red pepper but this time I forgot to buy, that is not a big mistake, because we are preparing aubergine and not red pepper. So do not worry if you do not have it.

The next tomatoes just few, but before you should peel off the skin, I usually scald them with boiling water, then immediately put under cold. That help to peel off the skin easily. I remove the inner juice of tomatoes, only skin that you can cut into slices.

The next a little onion and few garlic pieces, please chop them into small pieces.

Now you are ready to fry them.

 


FRYING THE VEGETABLES


 

First, of course, aubergine in oil, both sides should be slightly golden colour.

Then you take them out and fry separately carrots and if you have red pepper the also separately and onions.

After that I usually put the vegetables back into pan and add tomatoes, fry them for couple of minutes. Even you can cover the pan with lid and leave it for couple of minutes.

The last one is garlic, salt and a bit of chilli. Again mix it all and leave with covered lid for a few minutes, the water of tomatoes completely gone.

That everything now need to be cooled down and I usually serve them next day.

I also cook eggplant this way!))) Very tasty dish!!! But it is already winter, and these vegetables are not on the market, and if they are, they are very expensive!!!

Yes, this way it taste very well and it can be served with potatoes so one does not need any meat. It is here also noticeable that eggplants are not not really fresh, because they sometimes soft. I can imagine that buying them on market it might be expensive.

Thank God, my husband goes to the market for shopping - it's very hard for me ... Therefore, "The eyes do not see - the heart does not hurt!")))

Yes, that is my snack for night shift. I usually do not like to eat in the night but this salad is a light dish, taste great and not too heavy for stomach with fresh bread.
